It's not about food

Well, it's sorta about food, but mostly about people and how we change over time, especially our taste buds.

For example, I used to LOVE dill pickles. When I was a coal miner, I'd stop at this local gas station just about every morning and get 2 of those giant dill pickles. You know, the ones that were there on the counter in a huge glass jar. The clerk would spear them out and put them in a plastic bag and I'd eat one of those on my way to work and put the other in my dinner bucket to save for a snack later.

Now ? I can NOT stand the things. The fastest way to ruin a burger for me is to put dill pickles on it. People have told me "You can just take them off" but you can't. The juice has already soaked into the bun and that flavor is still there.

Mac&Cheese. As a kid, my favorite thing was the Kraft mac&cheese in the box. Then about 25 years ago as my kids were growing up, I found I'd lost my taste for it. It just didn't taste good anymore and I'd fix it for the kids, but for me...nah.

Vienna sausages. You know, those little pale hotdog looking things in the can. Years ago I could practically live off those, some Saltine crackers and a grape soda. Now, I mean, I a couple of them in the cabinet, but I bought them about 2 months ago and haven't even thought of opening one.

Some desserts that in my younger years were great and now they are just cloyingly sweet, like Cheesecake. I used to eat half the thing and now I get a tiny sliver, about equal to 2 bites and I'm done.

Some things haven't changed. I still go through Cayenne Pepper like most people go through salt. I put that stuff on everything from scrambled eggs to fried chicken. Mike's Hot Honey on a piece of fried chicken ? mmmmmm

Wanna liven up your cornbread ? Hot Honey. Hold back on the milk a bit and add a good drizzle. It goes really good with chili.
 
So I get up this morning or at least I think it's still morning and this is the first thing I read before breakfast or anything and one line stuck out so much I had to do this before getting on with my day.

When the stars are aligned and things are going according to plan, I like to do the majority of my cooking on the weekend and stockpile for the week or two ahead so I can just do quick and easy things on the daily. I also do this because I'm on a time-of-use energy plan with crazy peak charges between 4 to 7 PM, just when you usually want cook and it's 115° outside. On-peak charges don't apply on the weekends or holidays so that's what I'm up to today.

Made a big batch of meatballs on Saturday but today it is chili that's hot coming and going, chicken breasts I cut up into spicy strips and a $30 chunk of beef going in the crock-pot to be shredded for tacos that are all going to be blasted with the red cayenne . Some like it hot, as they say.

I've wondered if my favoring of the spicy flavoring is because I'm like 194 years old and my taste buds are just worn out and need the spicy to wake up or if my preferences have just changed?

Several months ago I decided to try a keto leaning carb restricted eating program coinciding with finally being one of the last people on the planet to buy an air fryer so I have pretty radically changed what and how I eat. In ditching so many of my staples and favorites and rediscovering how to feed myself again I've noticed a definite trend for the things with fire.

Maybe it's just a way to tell my brain "hey look at me" so I'll forget about all the things I was eating and loved before?
 
I like canned corned beef hash cooked in bacon grease with onions and 2 fried eggs in the middle. Then slide that bad-boy onto a platter
