Making chili for me was always a big process. Get all your stuff together in a big pot and simmer it for a couple hours but a month or so ago when I was scrambling for ideas what to make, I came up with a quick and dirty recipe with simple ingredients. I've really come to like this. It is no fancy high-end recipe but for a single person who doesn't want a lot of bother, it's perfect and better than any canned chili you can buy.. I store multiple containers of it in the freezer to heat up and eat on those days I'm feeling lazy.
- Dice up a whole onion and half a big garlic and toss in a can of green chilis or jalapeños (or both!)
- Lightly simmer in butter & olive oil a little but not too much
- Throw in a pound of ground beef & brown. Use lots of spices and red cayenne pepper
- Add 3 14.5oz cans of diced tomatoes - I use 3 different varieties and then simmer that for 20 to 30 minutes
- Now comes the cheating part: add 2 cans of drained Ranch Style Beans and keep heating until the beans are hot
