Tonight I am making a batch of meat balls. Some for now, some into the freezer for later and for easy access and a microwave visit if I need a snack.
  • A whole diced onion & half a whole garlic
  • 1 lb ground beef & 1 lb of hot Italian sausage
  • a couple eggs and splash of milk
  • some ground crackers and bread crumbs (little as possible to keep the carbs down)
  • Italian seasoning & Montreal steak seasoning
Makes 21 to 28 depending on size. I cook them all in my air fryer in several batches. Saving a tiny bit of meat to mix with cream cheese to make stuffed mushrooms tomorrow.

Three at at time is usually good for a meal with a side, plain or topped with ricotta cheese and marinara sauce.

Not sure what I'm having with tonight? Off to the lab I go!

You need some garlic bread. A nice French loaf, split in half with some garlic butter, Parmesan and Mozzarella and toast till the cheese is a little brown and the bread is nice and crunchy.
 
I was feeling super lazy last night so just Hot Pockets for me. Though truth be told I don't do much actually cooking, I still have issues with stoves ever since I almost died in a house fire started by grease on one. I am trying to overcome it though so if anyone knows any quick and easy recipes I'm game.

If you have a crock pot/slow cooker...

Chicken breast, Cream of Mushroom soup. Brown the chicken breasts in a skillet, just enough to get some color on the outside, don't worry about being done, you're just doing it for flavor. You can skip this step and it'll be fine. Put your chicken breasts and soup in the crock pot and set on low for 6 hours or high for 4.

Don't add water. The breast will have enough that it thins out. Serve over a bed of Knorr's Mushroom rice.

My kids used to beg me to make it. Serve with whatever vegetables or bread you like.

If you like pulled pork...

Get a BONE IN { can't stress that enough } Pork Shoulder Butt Roast. Season it heavily on all sides with Smoked Paprika. One whole jar of Pepperoncini and the juice goes in with it. Drop in it in your crock pot on high and forget about it for at least the next 8 hours. The longer the better. If it has fat on it, leave it. It will be fall apart tender. Remove the bone and put all the meat in a bowl with your favorite BBQ sauce. Stir and mix till it's all combined. Put on bun.
Add in some coleslaw and potato salad as sides or better yet, add a healthy dollop of coleslaw of top of the pork sandwich.
Have a comfortable spot for oncoming food coma.

Normally I'd do this on a grill, but that takes a lot of time and you have to keep track of the heat, so a crock pot is easier.

If you're worried about calories or cholesterol, don't ever ask a Southern cook for advice.

I'm doing the low carb thing to see if it works? Banned from consumption are: bread, pizza, pasta and tortillas.

Funny you should mention that. I'm cooking similar and have had it in my slow cooker overnight mit whole potatoes with skin, carrots and peppers, garlic. Turned it off early this morning about 2am. Not happy with the carrots but can ditch them if they taste crappy. Will microwave some long beans and place them with the mixer along with spring onions. Then add peppercorns and a little salt.

Reheat for midday meal today. Make a gravy. Now 7.20am. Back on a 9am.

I like food chat. We are having the kids, grandkids, and great grandkids along with my brother and his wife over tomorrow for a cookout on the firepit. I got ten pounds of chicken leg quarters, four breasts, some dogs and buns, some potatoes and carrots to put in a big dutch oven to put on the firepit and we will have fifteen to nineteen people here. We also are going to have strawberry shortcake, and deviled eggs. The kids might bring something, but I never asked them to. My youngest daughter will probably bring her homemade bread, it is really good bread, it is actually partly sourdough bread, being it is raised and refrigerated overnight after raising. The enzymes of the yeast break down the gluten and make it easier to digest even though it is kind of tough and airy.

It might be a little hard eating outside with the deer hanging around waiting for potatoes and carrots...one of them eats right from our hands. The others are very used to us, we have fed them for many of their generations, we presently have the grandmother, mothers, and the kids all here. We bought thirty pounds of potatoes today, so I do not think there will be a war between my relatives and the deer's relatives over the potatoes.
